I never really learned specific techniques, just how to make specific things, like an amazing tomato sauce, chicken parmigiana, sausage and peppers, frittata, lasagna, cheesecake, pastries, various other Italian foods and desserts, etc. From knowing how to make specific things, I was able to parse out technique, but I'd love to get some real training some day, as I'm sure I'm such a hack.
