* Time management -- spend about 2 minutes thinking about how long it's going to take to cook each thing, and put the longest-cooking thing on first while I prep the next thing, and so on.

* If I'm not sure if an herb will suit the dish, open the herb jar and sniff it while also sniffing the dish to see how they blend.

* Willingness to get my hands gross.
