We had it without condiments, but next time I'll top with some fresh chopped cilantro and some sharp cheddar. I cooked the quinoa in veggie stock instead of water, and used veggie stock in the recipe. I also used canned petite diced tomatoes because, let's face it, winter tomatoes *suck*.

I'm soaking red beans for veggie chili for tomorrow. Does anyone out there have a good recipe for homemade flour tortillas? I have not had great luck so far.
