Honey Chipotle Barbecue Sauce
Jun. 4th, 2009 03:33 pmThe ribs are slow-roasting in the oven. When they come out, I'll finish them with this barbecue sauce:
3 chipotle peppers in adobo, minced then put through a fine mesh strainer to get rid of the seeds.
2 cups tomato ketchup
4 teaspoons apple cider vinegar
1 cup brown sugar
1 cup honey
2 teaspoons garlic powder
1 teaspoon onion power
1 teaspoon salt
Freshly ground black pepper
(For the heat-avoidant, I make a version of this with smoked sweet paprika in place of chipotle peppers. For this amount of sauce about a tablespoon of paprika.)
Whisk ingredients together and let stand for the flavors to meld.
I'll brush some of this on the ribs and caramalize under the broiler (or on the barbecue), serving the ribs with more sauce on the side.
This stuff is also really good for dressing up canned baked beans. Also fabulous on chicken.
