Turkey Pot Pie
Dec. 3rd, 2013 11:29 pmThe same method as this, but the filling is mostly leftovers. Leftover gravy forms the base. I frenched and sauteed some onions. Added chopped celery, minced parsley and a few sprigs of thyme to the pan. When the onions started to brown I deglazed with some dry sherry, let that cook down, then, after removing the thyme sprigs, added the contents of the pan to the gravy. I microwave steamed some carrots and some potatoes and in those went. A couple of handfuls of frozen peas and a couple of cups of chopped up and shredded turkey followed, then I let it all come up to temperature, after tasting for salt (added) and pepper (added).
Into the dishes, topped with pate brisee, brushed with egg wash, a sprinkling of kosher salt and some pepper, then into a 375F oven for an hour.
Delish! Followed by homemade green tea ice cream and some homemade matcha pound cake.
